Andrew’s Favorite Date and Peanut Bars

Ingredients:
1 1/2 cups pitted Medjool dates, packed tightly
1 cup unsalted roasted peanuts
1/2 cup raw cashews
pinch of sea salt
1/3 cup chocolate chips

Blend dates, peanuts, cashews, and sea salt in a food processor until mixture sticks together when compressed. The nuts should be in tiny pieces.

*You might need to add a bit of water to get the mixture to the right consistency if the dates are dry. Add a teaspoon of water at a time until the mixture sticks together when pressed.

Move mixture to a bowl and stir in chocolate chips.

Place mixture between two pieces of parchment paper. Using a rolling pin, smooth the mixture to form a rough 8x8 square about ½ inch thick.

Place on a baking tray and refrigerate for at least an hour. Slice into 12 bars. Wrap in plastic wrap and store in the fridge.
